A Chicago restaurant has officially changed the game when it comes to everyone’s favorite fall dessert. Alinea, a three-Michelin-starred restaurant, debuted a clear pumpkin pie—and it’s like nothing you’ve ever seen.

The miniature dessert, created by Chef de Cuisine Simon Davies, is described as “barely gelled” and features a see-through center surrounded by classic pumpkin pie ingredients. “It is a distillation of pumpkin, cinnamon, ginger, and clove,” the restaurant explained in an Instagram comment. “Texture is very important to us. This melts away. If it were over-gelled it would not be worth serving. The main texture that brings on nostalgia is from the pate brisee.”

Unsurprisingly, social media users were amazed by the curious creation, which will be available through the fall season. “Clearly stunning,” one person wrote on Alinea chef Grant Achatz’s Instagram photo. “If the texture and flavor of that clear slice is somehow really pumpkin pie, I might have to splurge on another trip to Alinea,” another person wrote. Many others simply stated, “Amazing!”

Clear pumpkin pie isn’t the only unique dessert on Alinea’s menu. The restaurant also offers an edible helium balloon, which is made from green apple taffy and green sugar. Guests can enjoy the popular dish after popping it with a pin or inhaling the helium. In a video posted to YouTube, Alinea explained that the chefs truly “defy gravity” with the imaginative dessert.
