This week, Tilman Fertitta meets with Glenn Panitz and Michael Monks of Evolving Kneads Bakery.

Evolving Kneads Bakery offers gluten-free baked goods, including breads, cookies, pastries and other delicious desserts. Their goal, according to their website, is simple: “Make delicious tasting products that don’t actually taste Gluten Free.” Their baked goods can currently be found in some hotels, cafes and grocery stores.

Searching for a tasty gluten-free option, Fertitta is impressed with the fact that the baked goods don’t taste gluten free. He likes the taste but is worried about their food costs. He is also put-off when they indicate that there are no burger buns for him to try. It is not their number one item and would need to automate in order to produce. He challenges them to develop gluten-free desserts and buns for Bubba Gump and test them against the buns Landry’s currently uses.

Ultimately, Fertitta agrees that there’s a texture difference and the chefs indicate that they don’t see a need to swap out their current buns. While the buns weren’t a huge success, the desserts help redeem the entire test. He decides to try the desserts at a few of his restaurants and see how they perform.

They find that an entire box did not sell in a week and determine that they would need to be individually wrapped so they don’t spoil. If they are unable to find the right packaging, any hope of making a deal could fail.

In the boardroom, Fertitta likes the packaging but is concerned that the food costs increased again. Given that they increased based on his team’s needs, however, he accepts it. They suggest putting their dessert at 30 restaurants at 54 units per week for a total of $261,000. The guest feedback on their desserts also does not sit well with Fertitta. Despite the issues, he agrees to sell their toffee dessert in 30 restaurants with 16 units per week for a total of $77,000 in a year, which they accept.

According to CNBC, the reality television show “introduces promising companies across the country to one of America’s most successful businessmen: billionaire hospitality mogul Tilman Fertitta, Chairman, CEO, and sole shareholder of Landry’s, Inc.” Featured entrepreneurs present their small business to Fertitta in the hopes that he will place a large purchase order. But before they make their pitch, they must prove to the hospitality mogul that their product is worth it through challenges and customer feedback.
