Egg Nog Rum
Ingredients:
6 eggs
1 c. sugar
2 qt. milk
1 qt. heavy cream
Grated nutmeg
30 ml white rum
30 mi brandy
Break the eggs and separate the egg white and yolk. Beat the yolk until it becomes light. Slowly add the sugar and 1 quart of milk until the sugar is dissolved. Add the remaining milk, cream and liquor. Add the egg white and allow it to chill for at least an hour. Garnish with nutmeg before serving.
Remember, these eggnog recipes include raw eggs. There is always a small possibility of Salmonella food poisoning. The risk is greater for those who are pregnant, elderly or very young and those with medical problems which have impaired their immune systems. Some folks say the alcohol cures the eggs, but that may be wishful thinking.
You should never use unclean, cracked, broken or leaking eggs.
